Traditional Darnitskiy Bread Recipe: Learn How to Make Authentic Ukrainian Bread at Home

Ingredients ⤵️⤵️⤵️

For Pre-Ferment:
30 g rye starter
300 g water, cold
300 g dark rye flour

Dough:
Pre-Ferment
450 g water
390 g high-gluten flour (with 14 % gluten-forming protein)
255 g dark rye flour
33 g sugar
21 g salt

~ makes 4 small  5.5 x 3.125 loaves ~
