Non alcoholic Plum cake recipe
How to make kerala Plum cake
Plum cake recipe, Christmas fruit cake recipe

Ingredients:
For Caramel:
Granulated Sugar-1/2 cup
Hot Water-1/2 cup

For the cake batter:
All purpose flour ( Maida)-1&1/2 cup (190 g)
Sugar-1/2 cup ( 100 g)
Baking powder-1 teaspoon
Baking soad-1/4 teaspoon
Salt-1/4 teaspoon
Unsalted butter-115 g ( Softened)
Egg-3 ( At room temperature)
Orange zest-1 tablespoon
Caramel syrup - 1/2 cup

Spices:
Nutmeg-half of a small nutmeg
Cinnamon stick-2inch piece
Cloves-6
Grind with 1 tablespoon Sugar.
You can 1/4 teaspoon dry ginger powder . I am not using it here as I have used candid ginger for the recipe.

Fruits for soaking:
You can use any available dry fruits and nuts for your choice.

I used:
Cashews - 100 g ( chopped)
Apricot - 50 g
Golden raisins- 100 g
Black raisins- 100 g
Cherries( glazed)- 50 g
Candid ginger-20 g
Tutti frutti - 50 g
Orange juice-1 &1/4 cup

Notes:
1. You can use any fruits of your choice.
2. Toss the dried fruits with 2-3 tablespoon of flour from the 1&1/2 cup flour .
3. Preheat the oven at 170 C for 10 minutes. Bake the cake at 170C for 70-80 minutes.
Oven temperature may vary. So adjust the time as per your oven. Cook until done. Place the cake in the oven for 30 minutes after switching off the oven.
4. This cake weigh 1200g.
