THE RECIPE
1 TABLESPOON OLIVE OIL
1 1/2 POUNDS GROUND BEEF
1/2 CUP ONIONS CHOPPED, 1 TEASPOON OREGANO
2 TEASPOONS MINCED GARLIC
2 TEASPOONS WORCESTERSHIRE SAUCE
2 TABLESPOONS SUGAR-FREE KETCHUP
3 OUNCES CREAM CHEESE
SALT AND PEPPER TO TASTE
TWO EGGS
1/3 CUP HEAVY WHIPPING CREAM
2 CUPS SHREDDED CHEDDAR CHEESE DIVIDED
1/2 CUP PICKLE CHIPS
1/2 CUP BACON BITS.
Step 1 preheat oven to 400°.
Step 2 heat olive oil in a large oven proof skillet over medium high heat on the stove top
Step 3 add the ground beef and onions to the skillet and cook until the onions have softened and the ground beef is browned.
Step 4 drain any excess grease if needed
Step 5 To the skillet, add the minced garlic, oregano, Worcestershire sauce, sugar-free ketchup, cream cheese and salt and pepper. stir well.
Step 6 layer of the meat mixture in the bottom of a casserole dish
Step 7 in a bowl, combine the eggs heavy whipping cream and a cup of the cheese.
Step 8 pour the egg mixture over the top of the meat in the Castle dish
Step 9 top the meat with a layer of pickle chips and then the crumbled bacon top of the casserole with the other cup of cheese.
Step 10 bake for 20 -25 minutes and serve with freshly chopped parsley or garnish if desired.
