ANGLO-INDIAN CHICKEN PEPPER FRY (Tender Joints of chicken cooked with fresh ground Black Pepper) Ingredients 1/2 kg chicken cut into medium size pieces or 4 or 5 Chicken Thighs 3 large onions sliced finely 2 teaspoons fresh crushed black pepper or pepper powder 1/4 teaspoon turmeric powder 2 tablespoons oil salt to taste 2 potatoes boiled, peeled and cut into halves Mix the chicken with the pepper, salt and turmeric powder Heat oil in a pan and fry the onions to light brown. Add the chicken and mix well. Cook on high heat turning the chicken around for a few minute, Then on low heat for around 8 to 10 minutes till the chicken is tender and semi dry. Remove on to a serving dish. Add the potatoes to the pan and mix well to coat with the onion and pepper mixture. Turn off the heat and rest for a few minutes.
