Ingredients: 2 lbs cow skin (or cow foot) 1 onion, chopped 2 scallions, chopped 2 cloves garlic, minced 1-inch piece ginger, minced 1 Scotch bonnet pepper (whole or chopped, based on heat preference) 2 sprigs thyme 1 teaspoon pimento (allspice) berries 1 teaspoon black pepper 1 teaspoon salt 2 tablespoons soy sauce 2 tablespoons browning (optional, for color) 2 tablespoons vegetable oil 4 cups water or beef broth 1 large carrot, chopped 2 potatoes, chopped 1 can butter beans (optional) 1 lime or lemon (for cleaning the cow skin) Instructions: Clean and prepare the cow skin. Parboil the cow skin for 10 minutes, then drain. Marinate the cow skin with seasonings and let it sit. Sauté the cow skin in a pot, add water or broth, and simmer for 2-3 hours. Add vegetables and cook until tender. Stir in butter beans (optional) and heat through. Serve hot with rice and peas, dumplings, or hard dough bread.
