I'm Julie and we are a family of three. We live right on the coast here in the North East of England.
This week's menu -
Monday - Bacon cheeseburger magic pie, cheese hash browns, salad and pickles.
Tuesday - McDonalds.
Wednesday - Vending machine at the hospital.
Thursday - Bacon sandwich.
Friday - Sausage stew.
Saturday - Chinese style chicken and mushroom curry, egg fried rice and mini spring rolls.
Sunday - Mince and dumplings, mashed potato, mashed swede, sweetheart cabbage and gravy.
Toffee apple crumble and custard.
Magic bacon cheeseburger pie
1 pkt batter/Yorkshire pudding mix
OR
75g Bisquick mix
1 cup milk
1 egg
15 mls vegetable oil
250g minced beef
1 chopped onion
1 pack diced pancetta or 3 slices chopped bacon
1 tsp salt
Black pepper to taste
100g grated cheese
Mix batter mix or Bisquick with the milk, egg, oil and salt with a whisk and pour into a 9 inch cake/quiche tin which has been generously sprayed with cooking spray. Drop fried beef and onion mixture into batter, followed by the fried bacon and then top with grated cheese. Bake at 200C or equivalent for 25-30 minutes until puffed and golden.
