Grilled Corn + Zucchini Salad
Grilled Corn + Zucchini Salad with Lemon Dill Vinaigrette
Ingredients:
For the Lemon Dill Vinaigrette:
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 2 tbsp fresh chopped dill
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 clove garlic, minced
- Salt to taste
For the Salad:
- Olive oil
- Salt and pepper
- 1 large zucchini (about 12oz), sliced into thick chunks & then halved
- 3 packed cups arugula
- 1 cup corn (fresh, canned, or frozen & thawed)
- 1 cup cooked and cooled farro (or substitute with quinoa for a gluten-free option)
- 1/3 cup crumbled feta cheese (or substitute with vegan feta for a dairy-free option)
- 1 can (15oz) cannellini or great northern beans, drained
Instructions:
1. Grill the Zucchini:
- In a large bowl, toss the chopped zucchini with a bit of olive oil, salt, and pepper.
- Preheat a grill or grill pan to medium-high heat.
- Once hot, grease the grates and add the zucchini to the grill.
- Grill the zucchini for a few minutes per side until tender but not overly soft.
- Set aside and let them cool for a bit.
2. Prepare the Lemon Dill Vinaigrette:
- In a small jar or bowl, combine olive oil, lemon juice, fresh chopped dill, Dijon mustard, honey, minced garlic, and salt.
- Shake or stir the ingredients until well combined.
3. Assemble the Salad:
- In a large bowl, add the arugula, grilled zucchini, corn, cooked and cooled farro (or quinoa), crumbled feta (or vegan feta), and drained cannellini or great northern beans.
