How to make Halva (Greek Semolina Cake)

I'm Despina and I show you how to make Halva (Greek Semolina Cake).

You will need the following...

Cake:
- 125g (0.28 lb) butter
- 3/4 cup castor sugar
- Rind of 1 lemon
- 3 eggs, lightly beaten
- 1.5 cups semolina
- 4 tablespoons baking powder
- 1 cup plain flour
- 1/2 cup milk
- 1/2 cup almonds, finely chopped and lightly toasted
- 1 handful blanched almonds

Syrup:
- 3 tablespoons lemon juice
- 3 cups caster sugar
- 4 cups water

Tip 1: For a different flavor, you can substitute the lemon juice with orange juice.

Tip 2: Make the syrup first so it cools down sooner.

Note: Greeks and Cypriots recognise different varieties of Halva. This recipe is for the flour-based Halva. Another Halva is based on nut butter such as tahini.
