पौष्टिक व्हेज अंडा करी बनवण्यासाठी लागणारे साहित्य
• १ चमचा तेल
• २ मोठे स्लाईस केलेले कांदे
• आल्याचे तुकडे
• २~३ लसूण पाकळ्या
• किसलेलं सुकं खोबरं
• कोथिंबीर
• ३ मोठे चमचे तेल
• २~३ लवंगा
• २~ ३ काळी मिरी
• २ हिरवी वेलची
• २ चमचे कांदा लसूण मसाला
• २ चमचे लाल तिखट
• चवीनुसार मीठ
• जरुरीनुसार गरम पाणी
• १/२ कप पंढरपुरी डाळं / डाळवं
• १/४ चमचा धनेपूड
• १/४ चमचा हळद
• चवीनुसार मीठ
• १/२ चमचा लाल तिखट
• थोडंसं तेल
• २५० ग्रॅम पनीर
• १ चमचा कॉर्न फ्लोअर
• जरुरीनुसार पाणी
• चवीनुसार मीठ

Ingredients:
• 1 tsp Oil
• 2 big sliced Onions
• Chopped Ginger
• 2~3 Garlic cloves
• Grated dry Coconut
• Coriander leaves
• 3 tbsp Oil
• 2~3 Cloves
• 2~3 Black peppercorns
• 2 green Cardamom
• 2 tsp Kanda lasun masala
• 2 tsp Red chili powder
• Salt to taste
• Hot Water as needed
• 1/2 cup roasted Chana dal
• 1/4 tsp Coriander powder
• 1/4 tsp Turmeric powder
• Salt to taste
• 1/2 tsp Red chili powder
• Oil as needed
• 250 gm Paneer
• 1 tsp Corn flour
• Water as needed
• Salt to taste

Method:
• Heat up oil in a pan and add onion, ginger and garlic.
• Fry everything well together until it gets nice golden color.
• When onion gets nice golden color, move it along the edge of the pan and add coconut at the
 center of the pan.
• Fry the coconut well until it gets golden color and mix it well with onion.
• Turn off the gas and let the mixture cool down a little.
• Transfer it into a blender jar and add coriander leaves.
• Blend it into fine paste. Avoid use of water while blending.
• If needed add a little water while blending.
• Heat up oil in a pan and add blended paste.
• Fry it well for about 4-5 minutes on medium heat.
• When oil begins to release from the masala, add cloves, black peppercorns and green cardamom.
• Add kanda lasun masala, red chili powder and mix well.
• Add salt and fry everything well together for about 2-3 minutes.
• When oil begins to release from the masala, add hot water and mix well.
• Simmer the gravy on medium heat for about 5 minutes. Curry is ready.
• For making veg eggs, blend roasted chana dal, coriander powder, turmeric powder, salt, red chili
 powder together into powder and add oil.
• You can use water in place of oil.
• Blend it well together and transfer the mixture into a dish.
• Add oil just enough for binding and roll out small balls from it.
• If needed you can use water.
• Blend paneer into paste in food processor and add corn flour.
• Blend it well together and transfer the mixture into a dish.
• Take some paneer mixture and roll a ladoo from it.
• Make a hole at the center and fill in the chana dal ladoo into it.
• Cover it with paneer mixture and roll it into an egg.
• Heat up water in a pan and bring it to boil and add salt.
• Mix well and drop eggs into boiling water.
• Cover and boil the eggs on high heat for about 10 minutes.
• Let the water cool down.
• Take the boiled eggs out into a dish and let it cool down.
• If needed you can chill them in freeze.
• Cut each egg into 2 pieces.
• While serving serve the curry first and then add the eggs. Veg egg curry is ready.
