Stock Your Freezer Breakfast: Sausage, Egg and Cheese Breakfast Burritos

You need a one-handed breakfast
You need a one-handed breakfast so you can pack lunches, navigate the car rider line and get to work like you have it all together and these sausage, egg and cheese breakfast burritos are it! I even threw in some hash browns so this freezer meal has it ALL!
Store bought versions may be convenient but the "bonus ingredients" you'll get with them are worth skipping. Make a week's worth of these breakfast burritos in about 20 minutes then freeze them and microwave on your way out the door.

Recipe:
7 10-inch flour, corn or gluten free tortillas of your choice.
2 teaspoons avocado oil
2 cups shredded hash browns, thawed (store bought if the ingredients are clean)
Pinch Celtic sea salt and pepper
1/2 pound breakfast sausage of your choice (nitrate and nitrite free if possible)
5 whole eggs
1/3 cup salsa (preservative free)
1 tablespoon butter
pinch of salt and pepper
2 cups shredded cheddar cheese (shred your own)
Heat a skillet on high, add the avocado oil and hash browns. Season with salt and pepper and fry until golden on one side without moving them. About 7 or so minutes. Flip and cook a couple minutes more then transfer to a bowl.
In the same skillet add the sausage and cook, breaking it up as you go until no longer pink. Add to the hash browns.
In a medium bowl beat the eggs with the salsa and a pinch of salt and pepper. Set aside.
In the same skillet or a different one, melt the butter and add the eggs. Cook over medium heat until the eggs are scrambled to your preference.
To assemble:
Add a tablespoon of cheese to the center of a tortilla.
Lay a couple of tablespoons of the hash brown and sausage mixture on your cheese remembering to leave a border so you can roll them up.
Add a big spoonful of eggs and roll starting from the end closest to you. Tuck in the sides, and roll all the way up. Wrap in paper towels for freezing.
To freeze: Wrap each burrito in a paper towel and tuck into an air tight container or zip top bag. Freeze for up to 2 months.
To heat: Place one burrito in its paper towel in the microwave. Use the defrost setting and heat for 1 minute. Turn the burrito over and heat on regular power about 1 minute and allow to sit in the microwave 1 additional minute before enjoying.
