How To Make Perfect Crispy Fluffy Pakoras

Ramadan is around the corner and pakoras are a staple at Iftar time. We all have our own recipes and iterations for these well-loved vegetable fritters. That’s why I mainly wanted to focus on the tips and tricks that ensure your pakoras are fluffy yet super crispy. If you are new to making pakoras, worry not. I have also added my basic recipe in this video which you can of course customize as per your liking =)

Ingredients:
1 larger or 10-12 small Potatoes - Thinly chopped
2-3 small Onions - Thinly Chopped
1.5 tbsp Coriander Seeds - Roasted & Ground
1 tbsp Cumin Seeds - Roasted & Ground
1 tsp Red Chilli Powder
1/4 tsp Turmeric Powder
1 tsp Chaat Masala or Garam Masala
1/4 cup Chopped Fresh Coriander
1 tbsp Fenugreek Leaves
2 cup Chickpea Flour (Besan)
1/2 cup Rice Flour - Optional but makes the pakoras super crispy!
1/2 tsp Baking Soda
1/2 tsp or Taste Salt

NOTE:
You may also add 1/2 tsp Red Chilli Flakes AND/OR chopped green chillies to make them a bit spicy. Also, you may use other vegetables like carrots, spinach etc.


TIPS for making the perfect Pakoras

1. Mix all the ingredients except for flours & baking soda and let them sit for at least 10mins. This will ensure you don’t accidentally add too much water which can flatten the pakoras.
2. Add in some rice flour to make the pakoras super crispy.
3. Add baking soda to make fluffy pakoras
4. Fry on medium-low heat, the slower and longer they cook, the crispier they will turn out.
5. Take them out on a wire rack so the steam can vent through, keep the pakoras crispier for longer
6. Do not cover your pakoras as the steam will make them soggy.
