TOMATO PICKLE

Andhra style tomato pickle is one of the most popular pickles in Telugu speaking homes. Serve it with breakfasts like idli, dosa, pesarattu, rice, parathas or even with snacks.

Ingredients
7-8 Large tomatoes (chopped)
½ cup red chili powder (adjust to suit your taste)
50 Grams Tamarind
½ tsp methi seeds (fenugreek)
1 tsp mustard seeds
4 tbsp oil for frying tomatoes

Tempering
¼ cup of oil (mustard or peanut or sunflower)
5-6 curry leaves
1 tsp mustard seeds
¼  tsp methi seeds (fenugreek)
10-15 cloves garlic (whole)
½ tsp of cumin seeds ( jeera )
1 tbsp of chana dal
1 tsp of urad dal
1 tbsp of garlic (minced)  
2-3 dried red chilli deseeded
½ tsp of turmeric powder

Preparation for tomato pickle
- Make sure all your ingredients are dry and moist free.
- Wash tomatoes under running water and leave them aside to dry completely.
- Chop the tomatoes into pieces.
- Dry roast fenugreek seeds and mustard seeds on a low flame until aromatic and set aside to cool.
- Powder the roasted fenugreek seeds and mustard.
- Clean the tamarind with warm water and make sure it is cleaned well.
- Making tomato pickle
- In a frying pan add chopped tomatoes and fry them on a medium flame till they turn mushy. The pulp should be thick.
- Add tamarind to the cooked tomatoes. Adjust the tamarind to your taste.
- Mix and cook well for about 5 mins.
- When the mixture cools down completely, add chili powder, salt, prepared fenugreek and mustard seed powder and mix well.
- Check salt and spice. Add more if needed.

Tempering tomato pickle

- Heat a pan with oil. Add mustard, fenugreek, cumin seeds fry till they splutter, add chana dal, urad dal, dried red chillies and minced garlic. Fry until aromatic, add curry leaves, turmeric powder and garlic cloves. Fry them until they turn crisp.
- Turn off the stove. Transfer the tomato pickle to the pan and mix well.
- Cool the tomato pickle completely. Store this in an airtight glass bottle or pickle jar.
