This is a look at how I do chuck roast on the barbecue pit low and slow. It is a perfect combination between brisket and steak and the good thing about a high-quality wagyu  chuck roast is that you can literally cook it and pull it at any point, and it will usually still taste really good.

Pit temp 230 to 250
cook time 3 to 3.5 hours
rest time 30 mins to an hour

3.03lb Wagyu chuck roast
Mesquite and post oak wood
Grand Champion XD bbq smoker
