strawberry cheesecake recipe without cooking, light, fresh and incredibly good 😋
ingredients :
for the basis:
180g biscuits of your choice
70 g of melted butter.
for the cheesecake:
300g Philadelphia cheese
100g mascarpone
120g strawberry puree
200g full cream (unsweetened)
70g of sugar
1 sheet of gelatin
juice of half a lemon
for the strawberry jelly:
140g mixed strawberry purée
25g sugar
juice of half a lemon
1 sheet of gelatin
❗the mold I used here is 20 cm in diameter and 4.5 in height
❗The gelatin to use is bovine gelatin 150 bloom.
