Resep Fried Chicken. Kalian tim MCD atau KFC? Penasaran gak sih gimana cara membuat ayam goreng serenyah itu. Ternyata kunci dalam membuat Fried Chicken pada tepung dan proses pembuatannya. Paling penting adalah menggunakan bumbu perendam dan bumbu tepung yang berkualitas. Perendaman yang cukup lama akan membuat bumbu marinasi meresap dengan maksimal ke dalam daging ayam.

Resep Fried Chicken (10 pcs)

Bumbu halus:
10 siung bawang putih
1 buah bawang bombai
150 ml air

Marinasi ayam:
1 ekor ayam
4 sdm bumbu halus
8 sdm santan kental
2 sdm cuka beras atau 1 sdm cuka biasa
1 sdm bubuk kaldu ayam
2 sdt garam
2 sdm gula
½ sdm merica
1 sdm italian mixed herbs

Adonan tepung kering:
300 gr tepung terigu protein sedang
100 gr maizena
2 sdm baking powder
½ sdm merica
1 sdm garam
1 sdm paprika bubuk (opsional)
1 sdm bubuk kaldu ayam

Adonan tepung basah:
6 sdm adonan tepung kering
2 sdm bumbu halus
150 ml air

Lainnya:
Minyak untuk menggoreng

Langkah:
1. Blender bawang bombai, bawang putih, dan air hingga halus lalu sisihkan
2. Cuci bersih ayam, potong ayam menjadi 8-10 bagian
3. Blender italian mixed herbs supaya lebih halus, sisihkan
4. Campurkan semua bahan bumbu rendaman ayam, aduk rata lalu masukkan ayam dan tutup dengan cling wrap kemudian diamkan minimal 1-2 jam di suhu ruang atau semalaman di dalam kulkas
5. Campurkan semua bahan tepung kering, sisihkan
6. Untuk adonan tepung basah, ambil 6 sdm adonan tepung kering lalu campurkan dengan bumbu halus dan air lalu aduk rata
7. Tiriskan ayam dari bumbu marinasi, celupkan kedalam tepung basah lalu gulingkan kedalam tepung kering, tepuk-tepuk supaya keriting. Setiap akan menggulingkan ayam kedalam tepung kering pastikan tidak ada gumpalan di dalam tepung kering
8. Masukkan ayam ke minyak dan goyang-goyang sebentar lalu goreng dengan minyak panas, gunakan api sedang hingga ayam berwarna kuning keemasan lalu kecilkan api dan goreng ayam hingga cokelat keemasan dan tiriskan
9. Fried chicken siap disajikan

Fried Chicken Recipe (10 pcs)

Blended spices:
10 clove garlic
1 pc onion
150 ml water

Marinated Chicken:
1 pc chicken
4 tbsp blended spices
8 tbsp thick coconut milk
2 tbsp rice wine vinegar or 1 tbsp white vinegar
1 tbsp chicken powder
2 tsp salt
2 tbsp sugar
½ tbsp pepper
1 tbsp Italian mixed herbs

Dry Coating:
300 g all-purpose flour
100 g cornstarch
2 tbsp baking powder
½ tbsp pepper
1 tbsp salt
1 tbsp paprika powder (optional)
1 tbsp chicken powder

Wet Batter:
6 tbsp dry coating
2 tbsp blended spices
150 ml water

Others:
Oil for frying

Steps:
1. Blend the onion, garlic, and water until smooth. Set aside.
2. Clean the chicken and chop into 8-10 slices.
3. Blend the Italian mixed herbs to a finer texture. Set aside.
4. Combine all the marinade ingredients. Mix well, then add the chicken in. Cover with plastic wrap and marinate for at least 1-2 hours at room temperature or overnight in the fridge.
5. Combine all the dry coating ingredients. Set aside.
6. For the wet batter, take 6 tbsp of the dry coating and combine with the blended spices and water. Mix well.
7. Drain the marinating liquid from the chicken. Dip the chicken into the wet batter and roll in the dry coating. Make sure there are no clumps in the dry coating.
8. Wiggle the chicken as you’re adding it into the hot oil. Fry for a moment on medium heat until they’re golden, then lower the heat and fry until golden brown.
9. Fried Chicken is ready to serve.
