These crispy punjabi samosa recipe
These crispy punjabi samosa recipe is so delicious, you need to try it out! Plus you can make these samosas either baked or fried - both of which I have shown in the video today. Either way, they taste so delicious and turn out so good!
Ingredients I used:
For the cover:
2 cups of all purpose flour
2 teaspoons carom seeds/ajwain
2 teaspoons salt
4 tablespoons ghee/clarified butter (you can substitute it with oil or butter)
For the filling
4 boiled potatoes
3 green chillies
small bunch of coriander leaves
1 tablespoon crushed ginger
1 cup green peas
2 teaspoons of coriander powder
1 teaspoon jeera powder
1 teaspoon red chilli powder
1 teaspoon pepper powder
1 teaspoon garam masala
1/4 teaspoon amchur/dry mango powder (you can substitute this with same quantity of chaat masala or a teaspoon of lemon juice)
For deep frying:
Oil
Procedure:
- Make a hard dough with the ingredients for the outer cover - flour, carom seeds, salt, ghee and water.
- Keep the dough covered for at least 30 mins.
- In the meanwhile, for the filling smash potatoes with hands.
- Take some oil in the pan, add chopped green chillies and fry
- Add crushed ginger, and 1 cup of green peas ( I used frozen which don't take as long to cook)
- Then after frying for a while, add the crushed potatoes, salt and all the masalas (coriander powder, jeera/cumin powder, pepper powder, red chilly powder, garam masala and amchur/dry mango powder)
- Cook it for a while and add coriander leaves
- Let the mixture turn a bit dry so that the samosas don't turn soggy from the inside. LET IT COOL COMPLETELY. Very very important step to avoid soggy samosas.
- Then take the dough and roll it into a thin sheet.
- Cut the sheet in half, and make 1 samosa with one half.
- Make a cone out of one half of sheet and stuff it with 1 tablespoon of stuffing.
- Use some water to seal the edges.
For baking:
- Put the samosas on to a baking tray (I lined it with baking sheet too) and grease it with some oil.
- Bake them for 30-35 mins till they turn brown at 180C or 350F
- Flip them half way after around 15- 20 mins
For frying:
- Deep fry them in mildly hot oil
- Check the hotness of the oil with a skewer, if some tiny bubbles form next to it, the oil is good to be used
- Fry the samosas for 4-5 mins or till they turn golden brown on a very low flame to avoid burning
Serve hot with chutney, ketchup or dip of your choice.
