Pindi Chole | No Tomato

Pocket recipes brings out to you a Pindi Chole recipe in 5 minutes. This No Tomato, no onion, no garlic chole recipe is really easy to make. This desi black chole recipe is very delicious
Soak 3 bowls of Kabuli Chana overnight
After soaking them overnight, transfer to a pressure cooker
Add water ,salt and tea water
Cook until the chana is soft and tender but holds its shape
For Chana Masala, broil 3 star anise pods
Add 9-10 clove pods
3 Tsp Black Pepper Corn
Add 2 Tbsp Coriander Seeds
Add 1 Tbsp Cumin seeds
Add 1 Cinnamon Stick
Add 3 black cardamom pods
Add 2 dry red chilies
Add 2 bay leaves
Add 3 green cardamom pods
Add 3 green cardamom pods
Broil the spices over medium heat for 3 -4 minutes
Transfer the spices and grind them in a mixer or mortar pestle
Grind the spices to a fine consistency
In a pan fry some rougly cut potatoes
Fry the potatoes till they are golden brown
Transfer the boiled chana to a pan and heat
Add the 4 tsp ground chana masala
Add slit green chlies
Add ginger juliennes
Add the fried potatoes
Now add 3 tbsp piping ghee
Mix the ingredients
Add the chana water and cook along
Add 2 tsp Kala Namak or rock salt
Add 2 Tsp Ground Chana Masala
Add 2 Tsp Amchoor powder
Mix well and cook along
Cover the pan with a lid and cook for 15 minutes over low heat stiring occassionally
After 15 minutes uncover the dish
Stir around the contents
Add chopped coriander leaves
Stir the contents
Serve hot garnished with ginger, coriander and diced tomatoes
Relish the hot bhatura , a whole wheat poori or zeera rice , onions and lemon
