Pork Loin Roast 3.8 LBs
2 Large Sweet potatoes pealed and sliced evenly  
Apple Pie Compound Butter for Pork Loin
- 1/2 stick of unsalted Kerry Gold Butter
- 1 teaspoon of Apple Pie Spice Seasoning
- 3/4 teaspoon of light brown sugar

Cinnamon Sugar Compound butter for Potatoes
-  1/2 stick of unsalted Kerry Gold Butter
-  3/4 teaspoon of light brown sugar
-  1/2 teaspoon of cinnamon

1. Pre-heat sous vide machine: Set the Sous Vide Precision Cooker to 140°F (60°C).
2. Score the fat on the fat side of the pork loin
- seasoned with combination of apple pie spice seasoning, light brown sugar and with salt & pepper
3. Placed Pork Loin in 8" Premade 4MIL vacuum sealer bag with slices of of the apple pie compound butter on each side, then sealed with G210 Vacuum Sealer
4. Place sweet potatoes in 8" Premade 4MIL vacuum sealer bag with 4-5 slices with tablespoon of fireball whiskey and four slices of the cinnamon sugar compound butter on two both sides, then sealed with G210 Vacuum Sealer
5. Place Pork in Sous Vide container and set time for 3 hours
6. Place sweet potatoes underneath Pork after first hour to cook for two hours
7. After three hours remove Pork and allow to rest for 10 minutes, then remove from bag and pat top moisture from pork
8. Season with apple spice seasoning and light brown sugar
9. Gently coat skillet with Avocado oil and turn to medium high
10. Once skillet is heated place pork loin fat side up and sear non fat side for 3-4 minutes then sear fat side down for about 3-4 minutes then glaze non fat sides on pork loin tent loosely in foil and allow to rest for 8 minutes.
11. Remove sweet potatoes from bag once tender and place in large bowl...mix in a tablespoon of light brown sugar, with teaspoon of cinnamon, 1 stick of butter divided evenly and 3/4 milk then blend evenly until smooth
12. can add mini marshmallows and small torch light to brown atop sweet potatoes
13. Slice up pork loin into even slices serve with drizzle of remaining apple pie glaze with the sweet potatoes.
