Here is an easy and delicious way to get your cilantro lime rice fix. This goes great as a side to enchiladas, baked chicken or your favorite tacos. Enjoy!
INGREDIENTS
1 cup long grain rice (187 g) (I used medium grain)
2 cups (473 ml) water
2 tsp Knorr chicken bouillon powder (or sub for 1 to 1 1/2 tsp salt)
zest of 1 medium lime (3 g)
2 to 3 tbsp (30 ml to 45 ml) fresh squeezed lime juice
1/3 cup diced onion (50 g)
2 cloves minced garlic
1/4 cup (10 g) chopped fresh cilantro leaves
3 to 4 (5 g) fresh cilantro stems
1 scallion (optional)
2 tbsp (30 ml) oil to toast rice
