This sandwich has been a long time coming. The Spiedie which originated out of Binghamton, New York. The recipe has us marinate chicken (or pork or lamb) in what is, essentially, a sauce that if not identical to certainly tastes and looks like Italian dressing. After a soak for at least 24 hours the pieces are skewered and grilled over charcoal. What is interesting to me is the fact that the marinated very clearly has acidic components to it. This starts to “cook” the chicken much in the way lime juice starts to cook the fish in ceviche. My man and Club Sandwich member Erik was kind enough to send out a couple of bottles of marinade but wasn’t able to secure a bottle of Lupo’s who is apparently the big dog for Spiedies. So today, I’m making a Lupo’s style marinade, then testing all three against each other to see which one is the best.
