The is the best low carb almond cookie recipe that I have ever made.  If you love crispy crunchy cookies, then you will love these.  They are buttery and packed with almond flavor.  They cook up easily and crisp up beautifully as they cool.  The full recipe and macros are down below.  Give them a try and let me know what you think.

Crispy Almond Cookies

Recipe makes 24 Cookies
Information is per ONE cookie.

3/4 Cup Butter - Room Temperature

3/4 Cup Monkfruit

1 Large Egg
1/2 Cup Lupin Flour
1/2 Cup + 2 TB Almond Flour

1/2 Cup Finely Chopped Almonds
1/2 tsp Almond Flavoring
1/2 tsp Vanilla Flavoring
1/2 tsp Baking powder

Pinch of salt



Preheat oven to 350 degrees F.   Cream together butter and monkfruit until light and fluffy, about 4-5 minutes.  Add and and flavorings and beat till combined.  Combine flours, backing powder and salt.  Sift well.  Add four to batter about 1/3 at a time until it is all added.  Stir in almonds.  Chill for 15 minutes.Using a small cookie scoop, place dough on a silpat mat or parchment paper on a cookie sheet about 2 inches apart.  Use a fork to flatten each cookie.  Bake at 350 F for 11-12 minutes or until edges are golden brown.  
Remove from oven and let cool on the baking sheet for five minutes.  Move to cooling rack and allow to cool completely.  Cookies will crisp up as they cool.  Store in a sealed container in the fridge or on your countertop and enjoy!
