In my family, we eat chow mein at least once a week. We use different protein and vegetables combination so we don't have the same chow mein every time. I don’t always have Chinese noodle(WHEAT NOODLE) on hand. The Asian market is a little far from my home. So when I crave for chow mein, I would rather find a substitute to Chinese noodle than driving half an hour to the Asian market to buy it. I know Chinese noodle are usually made with wheat flour and egg, just like Italian pasta. That’s why I chose spaghetti as a substitute in my recipe. After all, what I am really going for is the authentic taste.

In the States, pasta is easy to find, and the price is more affordable. When stir frying, pasta is easier to handle than chinese noodle. they don't break apart or stick to the pan easily. If you are new to making chow mein, using spaghetti, linguine or angel hair is a great choice.

Five Spice Sauce
-dark soy sauce       2 tbsp

-sugar                       1 tsp

Pork tenderloin    5 oz/150g
-five spice sauce   1tbsp
-corn starch           1tsp
-oil                          1tsp

Cabbage     7 oz/200g
Carrot         3.5 oz/100g
2 stalks of scallion
Spaghetti     8 oz/227 g
