In this presentation, Chef Hayashi explains exactly what makes washoku - the cuisine of Japan - so special.

HAYASHI Daisuke trained at the renowned Kikunoi ryotei restaurant in Kyoto from the age of eighteen as a protégé of the multiple Michelin-starred chef MURATA Yoshihiro. He has brought his modern, progressive approach to gastronomic culture to London, most recently at Roketsu restaurant. From 2019, the Ministry of Agriculture, Forestry and Fisheries appointed him as a Japanese Cuisine Goodwill Ambassador for the promotion of Japanese food.
