French Fries... A perfect.. Golden.. Crisp.. Soft inside.. are ideal french fries..
It isn't difficult to make once you have recipe handy.. So this is the ultimate guide for making perfect french fries.
I'm getting request since 6 months and I'm trying for the perfection, and finally I got it.
First of all, this recipe involves lot of science and every step has some meaning, skipping one will ruin the texture and crispiness.
This recipe has 3 main steps : Blanching, 1st frying, 2nd frying.
Here is the list of ingredients and science behind each step :
- Potatoes (750g)
( Choose elongated potatoes, it helps to cut it lenghwise perfectly)
- Peel
- Thickness should be perfect ( thickness : 1/4 Inch)
Too thick would make it soggy and thin would darken the fries quickly. Keep the fries in almost the same size. This will ensure blanching and frying is done evenly.
- Soak in water for at least 30 min.
- This will release the excess starch.
- wash it multiple times, till water becomes clear.
( Clear water means the starch is removed. )
1st Step : BLANCHING
- Water 1 Kg
- Baking Soda (1/2 Tsp)
- Salt (1 Tsp)
- Cornsyrup (1 Tbsp)
( Substitute : Sugar (2.5 Tbsp))
- Put on low flame ( always )
- Do not let it boil
- Put in 2 batches
- Simmer for 15-20 min

Reason of baking soda :
- While boiling, putting baking soda makes the blanching water more alkaline.
The alkaline water helps the exteriors of the potatoes break down more, creating much more of the starchy slurry that leads to an extra-crisp exterior.
Reason of using Corn Syrup :
Mc'Donalds uses dextrose while blanching and that's the main reason why their fries after frying it remains golden.
Here instead of dextrose, we are using corn syrup which works exactly the same. It will give a nice golden color on exterior.
If corn syrup is not available, replace it with sugar it works almost the same.

- Simmer it on low flame for 15-20 min.
- Arrange it on wire rack ( it becomes easy to remove later on )
- Refrigerate for 1 hour.

Step 2: First Frying
Reason : First frying makes the exterior crispy after second frying and the interior soft (which is perfect fries)
- Put it on low flame (130C)
- Fry for 6-8 min
- Fry until it just starts getting brown color ( do not brown it at all)
- Drain it on kitchen paper.
- Let it lower the temperature a bit and then pack it in a zip lock bag.
- Pack it in different batches so that when you are ready to fry, you need not take all fries at a time. ( this will thaw some of the fries making it very soggy )
- Put it in Freezer for 2 hours ( you can store it upto 3 days )
- In Mc'Donalds they add sodium acid Pyrophosphate which prevents the fries from graying.
- But unfortunately for us we will have to use it within 3 days.

Step 3: Second Frying
- The oil should be slightly hot then previous.
- Put your gas stove on medium flame or set the fryer to 170C.
- Put the cold fries for frying and fry until they turn crisp and golden.

( Our fries will not look as gorgeous and golden as Mc'donalds as they fry them in Hydrogenated Soyabean Oil, which is very dangerous for health and that's why it is known as JUNK food or ultimately fatty. This is the main reason why you should take some efforts and make it at home. )

Step 4: Season
- Seasoning is very important.
- But normal granulated salt is difficult to coat on it.
- So there's this small trick, in mortar & pestle put salt and crush it.
- Crushing it makes it coat evenly.
- Sprinkle salt while the fries are hot.

- Viola... French fries are ready to be served. Serve it with loads of love.
