How to Make an Old Forge Pizza Crust

I get asked how to make an old forge crust almost daily.  People get so hung up on the precise details of the dough recipe, but the truth it that the process is more important than the list of ingredients.

I take you through the key steps of the process regardless of the dough recipe you choose to use. You can make this with homemade dough or stuff you bought at a local pizzeria or grocery store.

Parbaking the crust to a nice light tan where the dough bounces back after a gentle press with a finger. I don’t provide specific bake times because it’s dependent on your oven, equipment, volume of dough, and recipe.  Just bake it til it’s done!

After parbake, you want to place on a bakers rack to allow moisture to escape. This leads to a lighter, crisper crust.  after it cools, you can use it right away, refrigerate, or freeze the shell.
