CURRY FLAVOURED LAMB SHANK

INGREDIENTS
1.5kg lamb shank
3/4 cup of mustard oil
3 green cardamom pods
2 black cardamom pods
5 cloves
3 small bay leaves
1 mace
1 star anise
1 tsp of cumin seeds
1/3 tsp of ground asafoetida
1 large onion, chopped
1 and 1/2 tbsp of ginger&garlic paste
1 tsp of ground coriander
3/4 tsp of crushed black pepper
1 tsp of ground kashmiri red chilli
1 tsp of ground hot chilli
1 and 1/2 tsp of crushed fennel seeds
1 tsp of ground ginger
2 cups of yoghurt, whisked
salt to taste
some chopped coriander leaves
