Betty demonstrates how to make Grilled Pimiento Cheddar Cheese and Tomato Sandwiches. These sandwiches have two kinds of Cheddar cheese, some mayo, sour cream, and other ingredients to make them a favorite lunchtime snack.
Grilled Pimento Cheddar Cheese and Tomato Sandwich
4-ounce jar diced pimientos, drained
½ cup mayonnaise
½ cup sour cream
1 teaspoon finely-grated onion
1 teaspoon Worcestershire sauce
¼ teaspoon ground red cayenne pepper
8 ounces sharp Cheddar cheese, finely shredded
8 ounces white Cheddar cheese, finely shredded
¼ cup snipped chives
8 sliced of white or whole-wheat bread (to make 4 generous sandwiches)
2 medium tomatoes, sliced ¼-inch thick
softened butter, for spreading outsides of bread slices before grilling
Stir together all ingredients, except bread, tomato slices, and softened butter. Spread a bread slice with 1/3 cup of pimiento cheese mixture. Place 2 tomato slices on top of pimiento spread. Top with another bread slice. Slice brown edges from all 4 sides of the sandwich and discard. Spread one of the outer sides of the sandwich with softened butter. Place sandwich, buttered side down, on a hot griddle or iron skillet. Butter the top side of the sandwich. Grill the sandwich slowly, until the underside is brown. Turn sandwich and grill until other side is brown. Remove sandwich from griddle or skillet and serve immediately. Use the same process for the remaining sandwiches. About 4 sandwiches will fit in a large skillet at one time. To serve, slice sandwich down the middle, making 2 rectangles, or slice diagonally for 2 triangles, or slice along both diagonals for 4 small triangles.
