These 3 ingredient chocolate chip cookies are so easy to make, gluten-free, and eggless! I know peanut butter and pure maple syrup are such a weird combination for cookies, but they do come together and make delicious chocolate chip cookies! This 3 ingredient chocolate chip cookies recipe works best with creamy peanut butter, but feel free to use a different type of nut butter if you prefer or have allergies, but the consistency of these cookies will likely be different. Chill this 3 ingredient chocolate chip cookie dough for about 2 hours in the refrigerator or 1 hour in the freezer to prevent the dough from spreading out too much while baking. Store these chocolate chip cookies for up to 1 week at room temperature, 2 weeks in the refrigerator, or 6 months in the freezer. I actually prefer these 3 ingredient chocolate chip cookies straight from the refrigerator rather than at room temperature. And if you can't wait to eat these, you could also use this recipe as an edible cookie dough since it does not contain any flour or eggs. One of the best parts of this 3 ingredient chocolate chip cookie recipe is that it's a one bowl recipe, so you will have hardly any dishes to clean up after making this recipe! Ingredients 1 cup creamy peanut butter (use an alternative type of nut butter if you prefer) 1/3 cup pure maple syrup 1/2 cup semi-sweet chocolate chips (use any type of chocolate chips you have) 1/4 cup additional chocolate chips to top off the cookies straight from the oven (optional, but highly recommended) Directions 1. In a large bowl, add creamy peanut butter. This recipe works best with creamy peanut butter but can be made with another type of nut butter. Add pure maple syrup and mix until all of the maple syrup is incorporated into the peanut butter. 2. Add in chocolate chips and fold them into the mixture until they are combined. Cover the cookie dough and place in the refrigerator for 2 hours or in the freezer for 1 hour. Once the cookie dough is chilled, work quickly and shape the dough into small balls using your hands or a cookie scoop. 3. Place on a baking sheet lined with parchment paper, leaving some room in between each one. Bake in a 325 °F preheated oven for around 8 minutes or until the sides are a light brown. Add additional chocolate chips on top once these cookies come out of the oven.
