Its amazing to have the distinct pleasure of introducing to everyone here watching a true pioneer in the world of coffee in El Salvador, Diego Baraona. For over eight years, Academia Barista Pro has had privilege of working closely with Diego, and I can attest to his unwavering dedication to producing coffee of exceptional quality. Diego's passion for coffee was ignited at an early age, growing up amidst his family's coffee farm in El Salvador. This deep-rooted connection to the land and the art of coffee cultivation instilled in him a profound respect for the bean and its potential to create extraordinary experiences. Driven by a relentless pursuit of excellence, Diego followed the steps of his father and embarked on a journey to elevate his coffee-growing landscape in El Salvador. His father, became one of the first producers to introduce Ethiopian coffee varieties to this region, a bold move that would transform the country's coffee profile. Following his fathers footsteps, Diego's unwavering belief in the potential of Ethiopian coffees has paid off in spades. His meticulous attention to detail, from careful varietal selection to precise processing techniques, has resulted in coffees that are not only unique but also consistently outstanding. Today, Diego Baraona is recognized as a leading figure in the coffee industry, renowned for his innovative approach and unwavering commitment to quality. His coffees have garnered international acclaim, capturing the hearts and taste buds of coffee enthusiasts worldwide. But beyond his technical prowess, Diego is a true visionary, constantly seeking new ways to push the boundaries of coffee excellence. He is a tireless advocate for sustainability, ensuring that his farming practices not only nurture the land but also empower his community. I cannot think of a more fitting individual to help us understand what is happening in production and climate change so I invited him to my Sustainability Foundation Class. This 10 minute talk helped students understand this much better, and how they could seek ways to help fellow producers they buy from to takle their own climage change problems.
