This is harder than it looks and I will tell you now that I got extremely lucky in this battle. The strategy is simple; when he's getting back up, he will start...on Normal or Hard, except on Extra Hard, he will either start a combo or he will sidestep attack (the ratio in which one he'd do is, if I were to guess, 6:4). You CAN time the counter just well enough that either attack can be countered but that timing is extremely strict. As you can see in the video, I was lucky in that he simply tried starting a combo everytime he got up. On top of that, because of how sadly sloppy I was in this recording, I was also lucky he didn't do any long combos, especially ones that ended in the Tiger Drop, as on Extra Hard, ONE COMBO ending with the Tiger Drop will kill you.
I didn't upload this video right away because when I initially did it, my camera died and this battle can be the most difficult on Level 1 than any of the Coliseum matches or even Amon or the Shinzaki/Arase battle on Extra Hard and I dreaded going back to do it again. I simply went back, tried, and got lucky that it wasn't harder than it normally is.
Saves have been uploaded to GameFAQs soon and when they're available for anyone who wants to attempt this challenge (and most likely, do better). I know there are people who want to try challenges like these, but don't want to run through the whole game without leveling up just to do them and although you can't save with someone else's Yakuza 3 save file, you can still load it up and play it.
