Meso's Loaded Seafood Stuffed Baked Potatoes meet the requirement of being quick easy simple and delicious with the most important part being delicious is all together met in this recipe. This recipe is a big meal in one dish. Make sure you us really large baking potatoes to start with. Your family is going to call you a kitchen rock star, honey!

Meso’s Loaded and Stuffed Seafood Baked Potato w/ Sauce
4 Large Baking Potatoes
Oil & Salt (For Rubbing Potatoes)
1 ½ Pounds Large Shrimp
14 oz. Sausage (7 oz. Andouille / 7 oz. Smoked Beef)
2 ½ Cups Broccoli
16 oz. Parmesan Cheese
3 Cups Heavy Whipping Cream
2 Cups Evaporated Milk
¼ Cup Flour
1 Pound Mushrooms
Next All Seasonings Should Be Added To Taste
1 Tsp. Salt (or to taste)
1 Tsp. Black Pepper
1 Tbsp. Granulated Garlic
¾ Cup Chopped Fresh Parsley
½ Chopped Spring Onions
1 Tbsp. Dash Seasoning
*2 Ears Fresh Corn (optional for roasting)
Old Bay Seasoning (sprinkle over shrimp)
1 Tsp. Spice It Rite
1 Tsp. Paprika

Adjust all amounts of ingredients to accommodate the number of people you are serving!
Wash, dry, oil and sprinkle potatoes with salt. Get them into pre-heated 350-degree oven and bake.
Put oil in pan and sauté shrimp. Remove shrimp from pan and brown sausage. Remove sausage and in same pan and juices sauté mushrooms. Set shrimp, sausage and mushrooms aside.
In saucepan place ¼ cup olive oil ½ stick butter and let melt over medium heat. Add ¼ cup of self-rising flour to pan and whisk making sure that it is smooth with no lumps. Reduce heat and add half the parmesan cheese to pan along with 2 cups of evaporated milk, stir and allow to melt. Add remainder of parmesan and slowly add (milk or cream) paying attention to consistency as not to make mixture too thin. You want to keep a thick but easily stir-able consistency. Continuing to stirring and melting until all is complete. Begin to add seasonings stirring well all while.
Now add back in the sausage and mushrooms. Add broccoli and cook for 5 minutes saving shrimp for last. Add shrimp and remove from heat. You are ready to serve! Make cut into potatoes, squeeze open and fill/stuff with shrimp/sausage/mushroom mixture from pan.

*If you opt to use the roasted corn. Before you begin, wash and clean corn and pat dry. Rub with olive oil, sprinkle with salt. Place cast iron skillet on cap and let it get hot. Place corn in pan and turn on all sides until it gets brown (just a few minutes do not walk away). I use open fire (gas) and just turn mine over a few times until corn is browned and charred. Cut corn kernels from cob and sprinkle over entire dish and individual servings.
