Gut Healthy Sourdough Discard Marble Muffins

Ingredients:
230 grams sourdough discard
2 eggs
80 grams double cream
1 teaspoon vanilla extract
Lemon zest (to taste)
200 grams sugar or sweetener (to reduce calories)
50 ml milk
1/2 teaspoon salt
30 ml oil (vegetable or canola)
220 grams all-purpose flour
1/2 teaspoon baking powder
Chocolate (amount to preference)
A splash of milk (for melting chocolate)
Instructions:

First Mix:

In a large bowl, combine 230 grams of sourdough discard, 2 eggs, and 80 grams of double cream. Mix until well combined.
Second Mix:

Add 1 teaspoon of vanilla extract, lemon zest, 200 grams of sugar or sweetener, 50 ml of milk, and 1/2 teaspoon of salt to the first mixture. Mix again until smooth.

Third Mix:

Add 30 ml of oil, 220 grams of flour, and 1/2 teaspoon of baking powder. Mix until just combined.

Mixture need to rest of one hour.

Prepare Chocolate Mixture:

In a separate bowl, melt the chocolate and add a splash of milk. Stir to combine.
Preheat Oven and Prepare Muffin Pan:

Preheat your oven to 180°C (350°F).
Line a muffin tray with muffin liners or grease it lightly.
Combine and Fill Muffin Tray:

Fill each muffin liner halfway with the plain batter.
Add the melted chocolate mixture to the remaining batter in the bowl and mix gently.
Fill the muffin liners with the chocolate batter to create a swirl effect.

Bake:

Place the muffin tray in the preheated oven.
Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

Let the muffins cool in the tray for about 5 minutes, then transfer them to a wire rack to cool completely.
