Stuffed Courgettes and Eggplants

I love preparing stuffed vegetables! There are so many variations on how to prepare this recipe according to region, country and even household. This recipe is a wonderful Palestinian version shared by my mother-in-law. The recipe is simple yet delicious!

3 cups Calrose rice
12 small courgettes
12 small eggplants
250 g lamb cubes,
