BBQ Lamb Seekh kebab are delicious, spicy lamb skewers loaded with big Indian flavours and grilled over open flame. Serve them up with a bit of cucumber and mint yogurt dipping sauce and you have an appetiser that can eat like a meal.
Shopping List - Makes 4
600gm minced/ground lamb
150gm finely diced onions
15gm chopped coriander/cilantro
10gm chopped mint
1 1/2 tsp garam masala
1 tsp chilli powder
2 tsp smoked paprika
2 tsp ground coriander
2 tsp cumin
1 1/2 tsp chilli flakes
30gm chopped fresh ginger
15gm chopped garlic
8gm salt
55gm tandori paste
Method
1. Thoroughly mix all of the ingredients together.
2. To thread the meat onto a skewer you will want to start with
a ball of meat, slide the meat ball onto the skewer and gently
start squeezing, If the meat keeps falling off you need to persevere
and continue squeezing the meat down the skewer until
you have a long sausage shape.
3. Now cook these lamb seekh kebabs on a hot BBQ for between
12-15 minutes, or until firm to touch and cooked right through, alternatively you can pop them under a grill.
4. Serve with naan bread, salad and a cucumber and mint raita.
