The menu I'm going to show you is Earl Grey Scone, which many people like.
It's a scone that goes well with coffee, tea, or various jams and creams :)
It's such a grateful scone that's easy to make compared to the taste!
Earl Grey's scone is a combination of clotid and strawberry jam or raspberry jam. Also, put fig jam on Earl Grey's scone. The combination with black tea is really good too!
This time, I showed you how to rub butter without using a food processor or hand mixer. If you do it this way, the dough may get a little sticky because of butter, but there is no big problem if you bake it quickly after getting enough tissue.

*Materials and work order (5 scones large)

First of all, cut two Earl Grey tea bags into small bowls and pour hot water into them to make them feel cruel.

1. Create basic dough base
- 300 grams of flour
- 3 to 4 grams of salt
- 15 grams of baking powder
- 60 grams of sugar
- 50 grams of anchor butter
- 100 grams of gourmet butter

You can mix all the above ingredients and rub butter with your hands like in the video or change it with a blender. Or you can cut the butter as small as possible and mix it.

2. Make milk base for the prepared powders
Put a total of 30 to 40 grams of Earl Grey leaves and ground water in a measuring cup. (Put the tea leaves first and then adjust the amount with the water you gave.)
Please put 30 grams of whipped cream and 30 grams of milk in that measuring cup.
Then it's 90 to 100 grams in total.
Between 90 and 100 grams of liquid is appropriate from the time the weather is warmer to the winter, and 120 grams is appropriate in the winter. It is good to reduce the amount of liquid since the dough will get thicker due to humidity or temperature.

3. Mix dough base and milk base to knead.
Divide the milk base into two pieces and mix it so that there is no moisture in the dough. (No beating)

4. Tissue
When the dough is done, rest for 1 hour in the refrigerator, 30 minutes to 1 hour in the freezer.
It's time to wait for the dough to stabilize and become one.
If you don't have a tissue, you may break it in the process of shaping and baking.

5. Make the shape you want
Make it into a triangle, a circle, a square, etc., the weight you want, and the shape you want.
However, you have to finish it as soon as possible to maintain good condition.

5. Grilling
Lightly apply one of the three on the surface: egg water, milk, and white. It's to make glossy scones.
Bake at 183 degrees for 20 minutes in an oven preheated at 200 degrees. This is the reference point that I present, and depending on your oven or work environment, temperature or time may vary. If it's your first time, raise the temperature if it's too white, and if it's okay on the outside, lower the temperature and increase the time.
And the most important thing is preheating. Assuming you put in a plate, it's 200 degrees preheating. If you are going to put in four plates, preheat them to 250-260 degrees.
All scones must be heated to 180 to 183 degrees for 20 minutes to produce moderately ripe scones. I'm going to put in four plates, but if you preheat it to 200 degrees, the temperature drops a lot during the process of putting in the plate, so it comes out
