Ingredients:

▢ 1 whole rabbit (approx. 1.2 kg)

for the marinade:

▢ 700 ml kefir (or yogurt)
▢ 3-4 cloves of garlic
▢ the juice of a small lemon
▢ 3 tablespoons of olive oil
▢ salt, pepper, dried thyme

for cooking in the oven (spices of your choice):

▢ 200 ml white wine, demi-sec
▢ 3 tablespoons of oil
▢ 1 tablespoon mustard
▢ 1 teaspoon honey
▢ salt and pepper
▢ dried thyme
▢ garlic powder
▢ chilli flakes
▢ sweet paprika
▢ sage leaves
▢ bay leaf
▢ approx. 200 ml of water – as needed

for serving - garnish of your choice
