Amaranth Pudding with caramelised banana is a simple recipe that requires rajgira/amaranth flour. Amaranth is known to be a powerhouse of nutrients and yet very underrated. At home we often make rajgira rotis, puri and paratha as well. Amaranth is high in protein and has an abundance of nutrients like calcium, iron, magnesium, phosphorus and potassium. Also, this is the only grain to have vitamin C! Perfect for this particular stay at home right? Ideally raw banana is perfect for this ghee roast but I didn't have any at home, if you have it use that instead. Don't make it too sweet and keep the sugar and jaggery on the lower side so that you can have the whole bowl for breakfast
