Soft & buttery, these jam crumble bars are simple yet scrumptious treat! Made with a thick layer of jam/preserves & melt in your mouth shortbread cookie base. These bars are out of this world yummy!

INGREDIENTS
▪︎ 2 cups (250g) flour
▪︎ 1/3 cup (75g) superfine castor sugar
▪︎ 1/2 cup (113g) melted butter
▪︎ 1/4 tsp salt
▪︎ 1/2 - 3/4 cup jam/preserves (I made these crumb bars with strawberry jam, but you could use any flavour you like. Blueberry, blackberry, apricot raspberry, peach... the options are endless)

INSTRUCTIONS
1. Preheat the oven to 180 degrees C. Line an 8 inch pan with baking paper & set aside.
2. In a bowl whisk together flour, salt & sugar.
3. Add melted butter. Mix until just crumbly. Do not overmix.
4. Measure & set aside 1/3 cup of the dough, which will be used later in the crumble topping.
5. Press the remaining dough into an even layer in the prepared baking pan.
6. Top with jam/preserves & spread into an even layer.
7. Crumble the remaining shortbread over the jam, making sure you leave some spots of jam poking through.
8. Bake the bars for 35 - 40 minutes or until lightly golden in colour.
9. Allow the bars to cool before cutting. Enjoy!
