Okroschka is a Russian national dish.
The cold soup is made from sour cream, sausage, hard-boiled egg, radishes, potatoes, parsley, chives, dill and cucumber.
It is usually seasoned with spicy mustard, pepper and salt.

For cooking you need the following ingredients:

- 500ml buttermilk
- 500ml kefir
- 200g sour cream
- 500ml of water
- 1 bunch of radishes
- 1 cucumber
- 1 bunch of spring onions
- 3 bunch dill
- 3 eggs
- 150g meat sausage
- 3 potatoes (boiling and boiled)
- about 1 teaspoon of salt (to taste)
- about 1 teaspoon pepper (to taste)

This recipe is enough for 5 to 6 people.

The Okroschka is a cold soup of Russian origin, which is also eaten in the Ukraine.
The name probably derives from the word "kroschit", which means cutting into small pieces.

The classic soup consists mainly of raw vegetables (such as cucumbers and spring onions), boiled potatoes, eggs and cooked meat, for example, beef or veal, sausage or ham and kvass, a light alcoholic beverage made from fermented black or rye bread.

Okroschka is usually served with sour cream. Later creations from Soviet times used low-fat or diluted kefir, vinegar, mineral water or even beer instead of kvass.
