Born in Chicago, of Mexican parents, Rosio Sanchez spent five years of her professional life as the pastry chef of René Redzepi at renowned restaurant Noma. Afterward, she started her own chain of taquerias in Copenhagen – Hija de Sanchez. Before she went on to open her very own Mexican restaurant – Sanchez Cantina. Here, she finally gets to show her full potential, merging Mexican flavors and techniques with local, Danish produce and her own creativity.
