The Swabian Souls belong to the breads known in Germany as "Gebildbrot" which means symbolized bread which never changed its form, its taste or its overall look for hundreds and hundreds of years. Examples for this breads are pretzels usually shared on Saint Martin, the Easter Braid which looks like a Jewish Challah Bread, and the Souls which were given to the poor on All Souls, the day after All Saints. In my Bavarian Swabian home region, the Allgaeu, they sell those souls often filled with cheese, ham, and tomatoes from foodtrucks at the Christmas markets. You get them also at bakeries. The original recipe on which I based my facon souls was shared with me by my Swabian expat friend Bettina Hoehn Worrall who lives in Canada. Thank you Bettina!

Recipe: Heat oven to 425 F. Keep a baking sheet with a silicon mat at your side. Mix 500 gr. whole wheat bread or spelt flour with 300 mg lukewarm water and 1 1/2 tsp salt and 5tsp dry yeast. Put a towel over the bowl and let dough rise on a warm place for at least 30 minutes.
Knead dough when risen and work in 1 cup of crumbled chopped tofurky bacon which I browned slightly in a non-greased skillet. Kee a few facon crumbles for later for decoration. Form the dough in a rectangle and cut with the sides of your hands the portions for your souls .Hold it on one end and let it shape itself like a tongue or a soul. Put all souls on the silicon mat. Brush them with cold water and pour caraway seeds over them and leftover facon crumbles and bake them for 25 minutes at 425F.
They taste awesome when dipping into soup or with hummus, cucumbers and sprouts inside as filled hot soul. Bon Appetite!
