Little Millet also known as 'The Immune Boosting Indigenous Grain' is a wonder grain rich in insoluble dietary fibre and resistant starch. This grain is rich in magnesium which helps improve heart health and also aids in weight loss. Several delicious recipes can be made using this grain and 'Little Millet Pongal' is one of the tasty dishes which is easy to make and tastes great.

* Serves 4 persons

* List of ingredients:
1. Little Millet grain - 1 glass
2. Yellow split gram (Moong dal) - Half glass
3. Cashew nuts - 1 small cup
4. Green chilli - 1
5. Black pepper corns - 10
6. Curry leaves - 1 handful
7. Asafoetida (Hing) powder - 1 teaspoon
8. Salt - 2 teaspoons
9. Oil - 1 tablespoon
10. Turmeric powder - Half teaspoon

* Method of preparation:
1. In a bowl, take 1 glass little millet, wash nicely and soak in water (can use half glass water) for about 15 minutes, before it is ready to be cooked.
2. In another bowl, take half glass moong dal, wash well and keep aside.
3. Using a mortar and pestle coarsely pound 10 black pepper corns.
4. Into the pressure cooker, add 1 tablespoon oil, 1 small cup cashew nuts and fry on low flame until they turn golden brown.
5. Then, add the coarsely pounded pepper corns, 1 cut green chilli, a handful of curry leaves and fry all the ingredients.
6. Now, add the washed moong dal and continue frying on low flame until the dal turns aromatic.
7. Next, add the washed and soaked little millet grains and fry for a minute.
8. Add half teaspoon turmeric powder, 1 teaspoon hing, 2 teaspoons salt (can vary as per taste and quantity) and mix all the ingredients.
9. Now, add 4 glasses water and pressure cook on high flame (4 whistles).
10. Finally, garnish with freshly grated coconut and ghee.
11. Enjoy tasty and healthy pongal for breakfast/lunch/dinner.
