Hi guys! Brown Stew Fish is a delicious popular Jamaican dish often eaten at lunch and dinner time. Here's my step by step video on how to prepare it easily.

RECIPE 👇👇👇

1 ½ lb whole fish, cleaned thoroughly
All purpose or fish seasoning to taste
Black pepper
pinch of ground ginger (optional)
Flour to coat fish (optional)
Oil for frying  
2 cloves garlic, chopped(forgot to add it on camera 😄)
2 scotch bonnet peppers (1 whole, the other sliced if you can handle the heat)
¼ teaspoon freshly minced ginger (optional)
1 onion cut into rings or strips
1 small Carrot, cut into strips
Assorted sweet peppers cut into strips
3 - 4 sprigs thyme
4 Pimento grains
1 - 2 stalks Escallion diced
1 tomato chopped (optional)
3 - 5 tbsp tomato ketchup
2 - 3 tsp Oyster sauce n
About 3 tablespoon low sodium soya sauce*


1. Make slits in the fish on both sides. Dry the fish with paper towels.

2. Season with the all-purpose seasoning, black pepper and some salt if necessary.

3. If using flour mix the flour with 1 teaspoon all-purpose seasoning and coat the fish.

4. In a frying pan pour enough oil to cover fish halfway, one whole scotch bonnet or slices of scotchbonnet and the garlic cloves.

5. Fry the fish on both sides till firm and flesh is opaque.

To make the gravy
6. In a wide pot pour 1 tablespoon oil and sauté the ginger, onion, carrot, sweet pepper. Add the tomato and cook for two minutes. Add the ketchup, soya sauce, oyster sauce, a pinch of black pepper and ground ginger, water and sliced or whole scotch bonnet pepper. Add the scallion and pimento. After two minutes taste the gravy and adjust seasoning at this point.

7. Place the fried fish in the simmering gravy. Spoon the gravy over the fish and cook over low-medium heat till the fish absorbs the flavour and the gravy is reduced and very aromatic.

RECIPE NOTES
If you have no soya sauce you may use browning, burnt sugar or molasses but in smaller quantities.
