ইসবগুল কী? কিভাবে খাওয়া উচিত!
ইসবগুল বা ইসপাগুলা হাস্ক আসলে সিলিয়াম হিসেবে পরিচিত বাইরের দেশে এবং এ সিলিয়াম আসলে একটি সিড (বীজ) থেকে আসে এবং যেটি দুটি ফরমে (ধরন) পাওয়া যেতে পারে। একটি হচ্ছে হাস্ক (তুষ বা ভুসি), আরেকটি হচ্ছে পাউডার (গুঁড়া)। অর্থাৎ ইসপাগুলা হাস্ক বা ইসবগুল যখন হাস্ক ফরমে খাচ্ছেন, বাজার থেকে যেটি নরমালি নিয়ে আসেন, সেটি আসলে অর্গানিক (প্রক্রিয়াজাতকৃত নয়)। কারণ এটি আসলে জাস্ট ক্লিনিং প্রসেস করা হয় এবং পরিষ্কার-পরিচ্ছন্ন করে শুকিয়ে এটিকে জাস্ট জারে ভরা হয়।
দ্বিতীয়টি হচ্ছে পাউডার ফরমে যেটি, সেটি আসলে কমার্শিয়ালি (বাণিজ্যিকভাবে) তৈরি হয়ে থাকে। যেহেতু কমার্শিয়ালি তৈরি হয়, স্বাভাবিকভাবেই তার মধ্যে কিছুটা কালার অ্যাডেড হয়, ফ্লেভার অ্যাড হয় এবং ডায়েট সুইটনারের কিছু ইনগ্রেডিয়েন্টস (উপাদান) থাকে, সেগুলো অ্যাড হয়ে থাকে।
ইসবগুল সাধারণত কোষ্ঠকাঠিন্য দূর করতে ব্যবহৃত হয়। ইসবগুল একধরনের ডায়েটারি ফাইবার, যার কিছু জলেদ্রবীভূত হয়, কিছু হয় না। অন্ত্রের ভেতরে থাকাকালে ইসবগুলের ভুসি প্রচুর জল শোষণ করে। কোনো কিছুর সঙ্গে বিক্রিয়া করে বিষক্রিয়া তৈরি করে না। যেহেতু এটা কার্যকারিতার জন্য অন্ত্র থেকে জল শোষণ করে, তাই দুই চা-চামচ ভুসি, জল বা দুধে গুলিয়ে সঙ্গে সঙ্গেই খেয়ে ফেলা ভালো। দীর্ঘক্ষণ ভিজিয়ে রাখলে এটা বাইরে থেকেই জল শোষণ করে নেবে, অতএব কার্যকারিতাও কমে যাবে। তবে ইসবগুল খাওয়ার পদ্ধতির ভিন্নতার ওপর ভিত্তি করে উপকারিতা নির্ভর করে, চলুন এ সম্পর্কে জেনে নেওয়া যাক।
