Hand made noodle with delicious stir-fry on top, Laghman, is one of the most popular dish within Uyghur cuisine and has so many varieties! Today I will share with you my favorite recipe.

ウイグル料理レシピ:ラグマン
维吾尔料理:手拉拌面

Ingredients (2 people):
[ Noodle / 麺 / 面 ]
2 cups of Non Additive Flour / 中力粉 / 面粉
1/2 teaspoon Salt / 塩 / 盐
150ml Water / 水

[ The Stir-fry ]
350g Beef (or Lamb) / 牛肉
 - 1 tablespoon Soy Sauce / 醤油 / 酱油
 - 1/2 teaspoon Dried Peppercorn / 乾燥山椒 / 花椒
 - 1 teaspoon Starch /
80g Long Bean / ササゲ / 豇豆
40g (1 leaf) Chinese cabbage / 白菜
1 Tomato / トマト / 西红柿
1 Red Bell Pepper  / パプリカ / 红椒
1 Green Pepper / ピーマン / 青椒
1 Onion  / 玉ねぎ / 圆葱
80ml Vegetable oil  / サラダ油 / 油
1/2 tablespoon: Dried peppercorn/ 乾燥山椒 / 花椒
1/2 tablespoon: Salt / 塩 / 盐
2 tablespoon: Home made pepper sauce (optional) / 自家製パプリカソース / 自制辣椒酱
1 tablespoon: Tomato Paste  / トマトペースト / 番茄酱
1 tablespoon: Soy sauce / 醤油 / 酱油
1 tablespoon: Vinegar / お酢 /
1 tablespoon: Water / 水
