Just an easy recipe for Refridgerator Pickled Peppers which should last in the refrigerator for up to three months.

Ingredients:
Peppers I used: Sweet Banana, Jalapeno, and Serrano Peppers
(Some Serrano and Jalapeno peppers left whole)
For Brine:
2 Cups Water
2 Cups White Vinegar 5% acidity.
(Disclaimer...I did a 50/50...Ball suggests 1 part water to 2 parts vinegar)
3 Tbls. Sugar
1 Tbls. Minced Garlic
1 tsp. Salt
1 tsp. Garlic powder
1 tsp. Onion Powder

Combine everything but the peppers in a saucepan and bring to a boil. Add the peppers and boil or simmer for 1 minute and remove from heat. Let sit for about 7 to 8 minutes. Ladle into clean jars to 1/2 inch headspace, clean rims and place lids and rings on jars and tighten.  Let cool and place into the refrigerator. For better taste wait for at least a week before opening. The longer they sit before opening the better they taste. Should last up to 3 months in the refrigerator.
