Our family loves Mexican food, especially tamales during the Holidays season, in fact its a ritual to convert the house to a tamale making factory. Although it was chilly outside while we made this #shorts to show you how we make tamales, we always make sure to light a cozy fire for the chefs while wrapping tamales. Red pork tamales and Green pork tamales, its hard to pick which one we like the most, but rest assured they are delicious! And we try our best to make sure there are enough of these wonderful tamales to go around to family and friends.

I can tell you that we smoked about 22 lbs of pork on the Traeger for nearly 10 hours seasoning with salt and pepper only. I used hickory pellets and it was sooo guuud! Sassy made a red chile puree and green chile sauce to mix with the pork. The prepared masa was seasoned with the juice from smoking the pork. And for a additional stuffing Sassy used whole black olives. You can add just about anything you like! Then wrap carefully and use a food steamer until just right. Test one first before you do a whole lot. Freeze uncooked tamales and keep for later! Makes great gifts!
I'm not sure this is how you make traditional mexican tamales, but try it out.
