Our Back to Wine School series continues with the most popular subject for any wine lover: how to pair wine and food.

In today's tutorial, The Wine Sisters' founder and chief sommelier, Erin Henderson, first breaks down the structural elements in wine so we can better understand the reasons behind the food pairings.

And make sure you stick around until the 9:00 minute mark when Erin reveals her favourite idea on how to pair wine and food with success!

Wine and food pairing isn't difficult, but we need to understand the wine's structure: acid, tannin, alcohol and sugar levels to make the most of your wine and food pairing.

Just remember:
*High acid wine (like Sauvignon Blanc, Champagne, or Riesling) work well with rich and fatty foods (like squeezing lemon on fried fish)
*Powerful tannic wine (like Barolo, Cabernet, or Shiraz) work well with high-protein dishes
*Sweet wines (like Icewine, Port, or Sauternes) work well with sweet desserts, but also compliment salty cheeses or pâté!
*But Erin has a special trick she likes to use the most, and she tells you all about it at the 9:00 minute mark of this video
