EASY TAMALES USING PRE MADE MASA ~ PORK, CHICKEN, AND CHILI CHEESE ~ Yep!…All 3!

Hello, welcome to EZ Eatery! Today we’re making three super easy tamales; pork, chicken, and chili with cheese. We’re taking a lot of shortcuts, but the outcome is stupendous!! Everybody will be amazed with the flavors and guess what?…this will eliminate a lot of hassle and frustrations, not to mention intimidations. Plus it’s just in time for the holidays!

We like to enjoy tamales for both Christmas and New Years. They last for about 5 days in the refrigerator, but will last in the freezer for 6 months. Super easy to reheat from frozen too. Just wrap in a wet paper towel and microwave for a minute in each side. So, now is the time to start preparing for the holiday season.

I don’t have a specific recipe to follow, but I do use pre made masa and added a touch of cumin, cayenne pepper, salt, and about 3/4 C of chicken broth. Just make sure your pre made masa has baking powder and lard in it. Do the water test to ensure consistency. Place pea size ball of masa in a cup of cold water and make sure it floats.

For the chicken, I used bone in and skin on chicken thighs. I put them in the crock pot with some all purpose seasons (Susie Q) and cooked on high for 6 hours. At the 3 hour mark I added half an onion and about a Tbsp of garlic. . Shredded. I literally just added some chopped green chilis and green enchilada sauce. That was it.

For the pork, I baked fat and all and topped with all purpose seasons with about 2 cups of water. Baked at 325 F for 6 hours. At about 3 hours in, I added half an onion and a Tbsp of garlic.  Shredded and removed fat. Added red enchilada sauce, cumin, cayenne, paprika, and salt to taste. That was it.

For the pepper and cheese tamales, I charred pasilla peppers on the gas burner for about 4 minutes on all sides until black and bubbly. Stuck in ziplock bag for about half an hour. De-seeded and scraped off char. Added Monterey Jack cheese. That was it!

For the corn husks, place corn husks in cold water for about an hour until pliable with some weight to hold them down.

Add masa to husk, run a bit of filling down center, fold and steam for 45 minutes. Make sure water is in pot at all times. Don't let the tamales boil in the water, just keep enough in the bottom at all times because it does evaporate off.  Then turn off burner and let steam for additional 30 minutes. This is important. Do not remove cover during this process. You’ll see they peel away from husk and taste fluffy and delicious.

It’s still a bit of work, but in the long run, they’re mostly homemade! Nobody will ever doubt your steps and the results are truly sensational. I’m kind of a tamale snob, and find these tamales just amazing! I must say, my favorite is the pork. REALLY good!
