How to Make SPANISH Paella! If you are looking for a Vegetarian or Vegan paella, then this is a perfect Vegetarian Paella Artichoke recipe for you to try! we are going to make our veggie stock as well to enhance the flavor even more! Feel free to add any other vegetables to this!

-Olive oil
- 1 large onion, with skin
- 3 sticks of celery
- 2 large carrots
- 1 blub of garlic
- 2 star anise
- 1 TBS black peppercorns
- salt to taste
▶ Vegetable Paella for 2
- Olive oil
- 110g / 3.8oz of Bomba rice ( can sub with Arborio Rice )
- 180g / 6oz grated tomato
- 400ml / 13.5oz of stock
- 1 half red bell pepper
- 50g / 2oz green beans
- 6 asparagus
- 4 baby artichokes
- pinch of saffron (optional)
- salt to taste
- pimentos for garnish
